Tomato Onion Uttapam


Uttapam or ooththappam or Uthappa is a dosa-like dish made by cooking ingredients in a batter. Unlike a dosa, which is crisp and crepe-like, uttapam is a thick pancake, with toppings. Uttapam can be called as the Indian version of pizza. Today for all you here is the recipe of instant tomato onion uttapam. It’s very delicious , I love a little crunch in my dish so added coconut flakes and peanut you can do without them with your color add with grated carrots and chopped green bell pepper. Serves  :  3 

Ingredients :  
1 cup instant  uttapam mix 
½ cup  yogurt 
1 tbsp  rice flour 
¼  tsp hing / asefetida 
2 onion chopped 
1 tomato chopped 
¼ tsp ginger chopped 
2 to 3 garlic clove chopped 
2 tbsp  coconut  finely chopped 
3 to 4  green chilly chopped or to taste 
hand full of peanut ( optional) 
3 tbsp finely chopped coriander 
Salt  to taste 

Methods of Cooking:
In a bowl take uttapam mix, yogurt , rice flour, salt and hing and water so that it make a thick pan cake batter. Leave it for 10 to 12 minutes. Then in a bowl take onion, tomato, ginger, garlic, coconut and nuts ( if using ) and coriander. Mix them all. Pour ¾ cup of the batter on the tava (griddle), spread in a circular motion to make thick uttapam and cook on a medium flame for a minute. Sprinkle generously the chopped onion and tomato mixture kept in a bowl fully covering the top.Press a little with the spatula. Drizzle a tsp of oil or ghee on the sides . After a minute or two, flip the uttapam and cook in low flame for 2 minutes or until it’s light brown. Enjoy with coconut chutney or green chutney.
