Chicken Curry


Today I bring for all you a very delicious summer comfy chicken curry with aromatic Indian spice add. The curry is too light and simple to make . I am sure you all will love it. Chicken curry don’t need any long intro and you cook it any creative ways it comes out delicious. I am sure you all will agree that there is not too much miss with chicken curry. Today presenting one delicious chicken curry from my kitchen.


Preparation time : 15 to 20 minutes 
Cooking time : 30 to 35 minutes 
Serves : 4 

Ingredients 
700 gm chicken with bone
1 tbsp  green papaya paste
4 potatoes  cut into halves 
2 onion 
8 to 9 garlic clove 
½  inch ginger 
2 tomatoes 
½  tsp turmeric powder
1 tsp red chilly powder 
½  tsp Kashmiri red chilly powder
1 /2 tsp coriander powder 
1 tej patta/ bay leaves
2 to 3 elachi /  green cardamom
½  inch dalchini/ cinnamon 
½  staranise
hand full chopped fresh coriander leaves 
½ tsp butter
¼  tsp ghee / clarified butter
2 pinch garam masala powder
4 tbsp oil 
¼  tsp sugar (optional)
salt to taste

Methods of Cooking :
 Marinate the chicken pieces with salt , turmeric and papaya paste ( if you are expecting baby then skip green papaya paste ) for 2 hours. Take the chopper attachment, in it add ginger,garlic and onion. Keep aside. Then chop tomatoes. Keep aside. Heat oil in a pan. Then add bay leaves. Add half crushed cinnamon . cardamom and star anise. When you get the sweet flavor of the spices then add chopped onion ginger and garlic. Fry till little brown. Then add chopped tomatoes, turmeric powder, red chilly powder, Kashmiri red chilly powder , coriander powder and salt. Fry the masala till oil comes out. Add the chicken pieces . Stir and cook till the masala is well mixed with the chicken . Then add chopped coriander. Stir with the chicken and masala. Now add salt and 4 to 5 cups of warm water or chicken stock so that the consistency remain runny. Let it come to boil. Now cover and cook till the chicken is almost done. You can also pressure cook it.When the chicken is almost done add fried potatoes, sugar ( if using) and butter. Cook till the chicken and potatoes are well cooked.Then add ghee and pinch of garam masala. Cook for a few second on high flame. Put off the flame . Serve with hot steamed rice or roti or paratha or naan. I sprinkle little ghee on steamed Basmati rice and then ladle chicken curry over it. Can try my way, it taste too good.
