Indian Style Egg Mutton Stew

A stew is a combination of solid food ingredients that have been cooked in liquid and served in the resultant gravy. Ingredients in a stew can include any combination of vegetables (such as carrots,potatoes, beans, peppers and tomatoes, etc.). This stew taste best if you use slow cooking method but due to lack of time in now a days I pressure cook it. If you have some spare time and want to indulge in slow cooking simmer the soup in a slow flame to tenderize the meat the taste will be heavenly for sure. I shared the fast cooking method use according to your time and way in any case it taste superbly delicious. This stew have both mutton and egg and vegetables. So all those who love the both with the goodness of veggies can enjoy this Indian style Egg Mutton Stew. I am sure you all will love this delicious stew.

Preparation time 15 minutes
Cooking time 50 to 60 minutes
Serves 4

Ingredients : 
500 grm mutton/ goat meat
4 eggs hard boiled 
2 carrots peeled and cut into cylindrical thick strips 
2 to 3 potatoes  cut into big chunks
10 to 12 okra head and tail tripped off
1 onion paste 
2 tsp garlic paste 
1 tsp ginger paste 
½   cup tomato paste 
2 tbsp yogurt
1 bay leaves
2 green cardamom
½ inch cinnamon 
4 to 5 clove
¼   tsp whole cumin
¼  tsp whole coriander
¼  tsp whole fenugreek seed
½  dry fenugreek leaves/ kasoori meethi  crushed
1 tbsp roasted coriander powder
1  tsp roasted  cumin powder
1  tsp  red chilly powder or to taste
½ tsp turmeric powder
½ tsp roasted garam masala powder 6 to 8 whole green chilly ¼ tsp sugar (optional) 1 tbsp + ½ tsp ghee ( clarified butter) 4 to 5 cups of warm water ¼ cup oil salt to taste

Methods Of Cooking : 
Heat 2 to 3 tbsp of oil in a pan then. Now fry the potatoes till golden. Keep aside . Now fry the carrots and keep aside. Fry the okra till crisp and keep aside. Then fry the boiled egg slightly in ½ tsp ghee. Keep aside. Now in another pan heat oil. Add bay leaves whole cumin , coriander , fenugreek, clove , cinnamon and cardamom and kasoori meethi in oil. When the seed start to splutter then add garlic paste . Stir a little then add onion paste and ginger paste. Fry till the onion is slight brown. Now add tomato paste and yogurt , salt with all the dry roasted masala except garam masala. Fry till oil comes out. Now add the mutton, if the masala gets too dry to avoid burning add little warm water. Now in this masala fry the mutton chunks well. Then add 4 to 5 cups of warm water and pressure cook it till the mutton is tender. Now open the lid add fried potatoes , carrot, whole green chilly and fried egg and cook with the lid on but not with the whistle for another 5 minutes. Then add sugar ( if using ) ghee and garam masala. Mix well. Cook for another 1 minute. Then add fried crispy okra. Put off the flame and serve hot with naan , paratha , kulcha or simple flat bread roti with a dash of lime juice if you want. Enjoy Indian style Egg Mutton stew.
