Ajwain Paratha/Fried Indian Flat bread with Carom Seeds


A very delicious recipe today I am taking to our Potluck Party.The original recipe is from my dear fried Jagruti so you can catch up the original recipe in her site Jagruti's Cooking Odyssey. It was successfully created in her kitchen and then I try my level best to create it in mine. It is absolutely delicious the flavor of carom seed add extra zing to this recipe. I must admit her one is picture perfect while mine will be in coming days when I will be keep trying to be as best as her. Yes it need a little practice for person like me who is not very good at making bread and parathas. But once you get it right then it is simply awesome. I serve with it potato curry. I made the curry in ghee with whole cumin and hing ( tadka) adding lots of tomato with boiled potato and at last adding little garam masala. The curry goes very well with the ajwain paratha. I didn't do any experiment with I just make the way my friend shared.Thanks a lot my dear Jagruti for sharing a precious gem from your kitchen.It feels great to recreate it in my kitchen!


Preparation time 30 minutes
Cooking time 45 minutes
Serves 5 to 6


Ingredients:
4 cup whole wheat flour ( chapatti flour ) + extra for dusting
2 tsp. Carom seeds ( ajwain )
3 tbsp. oil + for shallow frying
1 tsp. salt

Methods of Cooking
In a big bowl take flour, salt, ajwain and oil and mix well. Add water little by little to make a soft dough. Let this dough rest for 10 to 15 minutes. Knead the dough again in time of making the paratha. Then divide the dough in equal size round balls. Now dust some flour on the surface. Flatten the ball and roll in to small circle. Apply a drop of oil spread it and then dust little flour. Fold it to give the shape of semicircle. Again apply little oil and dust with flour fold to make a triangle. Now press the triangle and roll to make a big triangular carom seed paratha. Now heat your griddle or tawa in medium heat. Place the paratha on the griddle for 20 second and let it cook until you see some brown bubble spot. Flip and cook the other side like wise, sprinkling little oil. Once both side is well cooked. Serve hot with your favorite curry or raita. I think this paratha will also go well with non veg curries. It is crispy and flavorful and the best part of it is the carom seed added to it will help to keep down your acid level which sometimes is a problem when we have such fried parathas and puris. My whole family loved it and from now on it will be in our food fav list. Enjoy!
