Egg tomato is a delicious colorful hot and sour curry which is very easy to make and great for winter dinner. This is fast to cook and you can relish this with roti,paratha or steamed rice.
Egg boiled 4 Tomato 1 big chopped Tomato sauce 1tbsp Chilly garlic sauce 1tbsp or to taste Panch phoran (Bengali whole five spice mix) 1/2 tsp Red chilly powder to taste Kasmiri red chilly powder 1/2 tsp Onion garlic and ginger paste 1tbsp Turmeric powder 1/2 tsp Mustard oil/ sunflower oil 2tbsp Garam masala powder a pinch Sugar 1/4 tsp Salt to taste
Take a small bowl and mix the onion ginger and garlic paste,red chilly powder, turmeric powder with one tsp of water. Keep aside. Now heat oil in a pan add panch phoran as it start to splutter then add this spice mix add stir continuously for a minute or two. Then add tomato stir for another 4 to 5 minutes. Then add the boiled eggs. Mix so that the spices is well coated with the eggs.Now add tomato sauce and chilly garlic sauce salt and sugar, mix well. You can add very little water if needed. Finish off sprinkling garam masala powder in it. Cover and give 5 minutes standing time before serving.
