Mutton liver which is called mete in Bengali is not only tasty but very healthy too. It’s rich in protein and Vitamin – A, good for the younger people but for the older people make the portion size small cause it is very rich in fat. Today I make a festive style very spicy and delicious stir fried mutton liver dish. It goes well with paratha , naan or cumin rice or fried rice. Preparation time: 25 minutes Cooking time: 40 to 50 minutes Serves: 4 to 5 Ingredients : 1 kg goat/ lamb liver (cut into small bite size pieces) 1 small onion 3 cloves garlic 1 inch ginger 2 bay leaves 1 whole red chilly 1 tsp whole garam masala 5 onion finely sliced 1 ½ tbsp garlic paste ½ tbsp ginger paste 3 tbsp tomato paste 1 tbsp tomato sauce 1 tbsp mustard sauce 1 tsp chilly garlic sauce 1 tsp red chilly powder ½ tsp turmeric powder ¼ tsp sugar (optional) ¼ tsp garam masala powder handful fresh coriander chopped ½ tsp lemon juice (optional) 5 to 6 tbsp oil Salt to taste Methods Of CookingWash the liver pieces well . In a pressure cooker take the liver pieces, whole small onion, garlic clove, 1 inch ginger, bay leaves and ½ tsp whole garam masala with water. Pressure cook till the liver pieces are well cooked. Leave it for 10 to 15 minutes. Now strain the water and keep the liver pieces aside. In a pan heat oil add bay leaves, rest of the whole garam masala and whole red chilly broken into halves and then sliced onion and sugar. Fry till translucent. Add ginger garlic paste, tomato paste, red chilly powder, turmeric powder, salt . Stir for 2 to 3 minutes. Then add the boiled liver pieces and stir for another 10 to 12 minutes. Simmer the flame and cover and cook for another 5 minutes. Then add the all the sauces using. Stir and cook for another 5 minutes. Sprinkle garam masala powder. Mix well. Put off the flame .Garnish with chopped coriander and sprinkle little lemon juice. Cover with a lid and give 5 minutes standing time before serving. Enjoy.
