Baigan Ki Bharta is a rich delicious dish from North Indian cuisine. It is spiced up mashed egg plant. There are two types of Bharta found the one which is simple where mainly raw ingredients is used with roasted eggplant. But today I am sharing a rich royal delicious version of baigan ka bharta, you can easily serve this in delicious dish in as your party spread with all other royal dishes. So give it a try and I am sure you all will love it.

Ingredients : 1 egg plant 1 big onion chopped 1 tsp ginger paste ½ tsp garlic paste 2 green chilly chopped ½ tsp turmeric powder ½ tsp red chilly powder 1 big tomato chopped hand full green peas (optional) 1 egg ( whisk egg in a bowl ) 1 tbsp raisin 1 tsp ghee ( clarified butter) ½ tsp garam masala powder handful chopped coriander leaves 2 tbsp mustard oil/ or any oil you want to use 1 tsp fresh cream ( optional) ½ tsp of sugar salt to taste Methods of Cooking
Baigan Ka Bharta requires that the eggplant be roasted. This can be done in many ways. Roast in a oven grill or in barbecue grill. Or in a gas cook top by just placing the egg plant straight on the burner and keeping the flame on low setting. Either you are using cook top or grill keep turning periodically till the skin of the eggplant is well charred and the inner flesh looks really soft. Once the skin is totally charred let it cool and then peel off the charred skin. Once cool, coarsely mash and keep aside for later use. Heat oil in pan then add the chopped onion fry till little golden. Then add the ginger garlic paste. Stir for few second then add the tomato and green peas. Then add turmeric powder and red chili powder. Stir till the tomato get soft. Then add the green chilly. Now add the mashed egg plant, salt, sugar, whisked egg. Now go on stirring the mixture for 6 to 8 minutes. Now add the raisain, ghee and garam masala. Stir the whole mixture well for another 5 minutes continuously. Add fresh cream if using and mix well. Now sprinkle chopped coriander leaves. It’s a very delicious dish go well when served with roti , paratha or any kind of fried Indian bread . You can try with plain steamed rice and if you want to be very innovative then use it as bread spread and have it. Time to relish yuumy Baigan Ka Bharta!
